Josep “Pitu” Roca, recognized as World’s Best Sommelier 2022 by The World’s 50 Best Restaurants, has visited Dominio de Calogía and tasted the current and future vintages of this boutique winery in Ribera del Duero.
“Pitu Roca is in the Olympus of the world sommelier”, says José Manuel Pérez Ovejas, who thanked his visit and interest in the project and the trust that El Celler de Can Roca (*** Michelin), considered in previous years as “Best Restaurant on the Planet”, has placed in Dominio de Calogía.

Our expert José Manuel Pérez Ovejas takes us into his origins, taking us to the early years of his life, which were already surrounded by vineyards. He also tells us a little more about the Dominio de Calogía project, of which he is the owner. From the vineyard to the winery and within it, the different stages of winemaking and the importance of cooperage.
The Ribera del Duero celebrates its 40th anniversary and the newspaper “Vanitatis” mentions Dominio de Calogía among the wineries with the most echo in recent times.
The value that the Ribera burgalesa has been gaining for years, especially at this time when the high temperatures push to seek cool areas and altitude in the vineyards, has made Burgos a province of enormous attraction for the wineries that come to the Ribera. Dominio de Calogía (Roa, Burgos) is one of the wineries that has made the most noise after its foundation as it is the personal project of the renowned winemaker José Manuel Pérez Ovejas, until a few years ago the architect of the wines (specifically, thirty vintages) of the historic family house Hermanos Pérez Pascuas. Now, Dominio de Calogía is a dream come true that materialized two years ago in his homeland, between the villages of Roa and Pedrosa de Duero. A modern boutique winery, surrounded by its own vineyards located in the vineyard from which it takes its name. And the result of José Manuel’s experience, knowledge and know-how is his first wine, Dominio de Calogía 2019 (70 € approx.), a Tempranillo aged for 14 months in French oak that is elegant, with great structure, red fruit and freshness, with balsamic touches and very long on the palate. A great wine that already has a big brother, Dominio de Calogía Cuvée ‘S’ 2019, of which only 2,500 numbered bottles have been released.
Dominio de Calogía, which came onto the market last year to great recognition and approval, now has a new relative – Cuvée ´S´. This label restates the winery’s commitment to making top-of-the-range wines.

Dominio de Calogía by José Manuel Pérez Ovejas Cuvée ´S´ 2019 reflects the unique nature of an exceptional concept. The batch comprises only 2,500 bottles and condenses the exclusivity of a great wine that pursues excellence. This upshot, which is characterised by authenticity, has been achieved from an old single vineyard given the utmost care and José Manuel’s very own wine-making. The 26-month ageing in French oak barrels has been rigorously guided and adjusted with the utmost respect for the wine resting inside.
‘CALOGÍA’ TERROIR´. THE EXPRESSION OF THE ORIGIN.
Domain of Calogy by José Manuel Pérez Ovejas Cuvée ´S´ 2019 has been made from the oldest vineyards on the estate. Control is exhaustive and production is drastically limited by severely thinning clusters to achieve the utmost quality. Rigorous fruit selection is the perfect culmination of this undertaking, which represents contemplation of the land and the surroundings. It is an expert interpretation of the vineyard, in which sensitivity is the driving force to achieve the objective: making a unique wine.
